Cherry Cheesecake Bars

2 cup flour
1 1/2 cups uncooked oats
3/4 cup firmly packed light brown sugar
1/2 cup butter or margarine, softened

1 package (8 oz.) low fat cream cheese, softened
14 oz. can low fat sweetened condensed milk
1/4 teaspoon almond extract
1 can (21 oz.) Cherry Pie Filling

 

  • Line a 13x9 inch pan with foil; lightly grease foil.
    Combine first 4 ingredients in a large bowl, stirring until crumbly. Reserve 1 cup crumb mixture. Press remaining mixture into the bottom of prepared pan.

 

  • Bake at 350 degrees for 15 minutes.

 

  • Beat cream cheese at medium speed with electric mixer for 1 minute or until fluffy. Gradually add condensed milk and extract; beat until smooth. Spread over crust; top with fruit filling. Sprinkle with reserved crumb mixture.

 

  • Bake at 350 degrees for 45 to 50 minutes or until golden. Cool on a wire rack. Lift cheesecake out of pan using foil. Cut into bars and chill.
    YIELD: 2 1/2 dozen bars
